High on Mount Mainalon in Arcadia, at elevations reaching 1,500 meters, bees work the black fir forests (Abies cephalonica) and produce something the rest of the world's hives cannot: a raw honeydew honey with pearlescent, vanilla-like streaks and a naturally thick, creamy texture. It is the only Greek honey to carry PDO (Protected Designation of Origin) certification — heritage, protected by law and by altitude. No flavors or additives, ever; the "vanilla" is simply how the forest writes its name. Its naturally low glucose content keeps it smooth and resistant to crystallization without heat or processing.
