Nicaragua got there first. Honey Bear Reserve was the first coffee of its kind born out of the artisanal "honey" movement — a name that misleads charmingly, because no honey is involved at all. Just beneath the skin of the coffee cherry, as with the best wine grapes, lies a thick layer of fruit wrapped around two seeds. Rather than fermenting them in spring water, the growers lay the fruit-covered seeds out in the Nicaraguan sun for seven days. The fruit melts like honey, curing the raw seeds and infusing a faint natural sweetness that survives the roast. Every bag is hand-stamped where it was grown.
Medium roasted and ground for whatever method you favor — drip, press, pour-over, the stovetop pot your grandmother used. The sweetness stays subtle, the body is generous, and it takes cream without disappearing into it.
