Dragon fruit dries to a startling fuchsia speckled with black, and it keeps that color because it is dehydrated slowly at a safe temperature rather than cooked. Nothing is added: no sugar, no preservative, no dye.

Float a slice in sparkling water or a gin drink, scatter them over oatmeal or a salad, press them into cake frosting, or grind them with sugar for a colored rim. They are equally at home in a tea blend, a garland or a potpourri bowl.
