Blue spirulina — phycocyanin, properly — is a blue-green algae widely counted as a superfood. It is not the common green spirulina, and it carries none of that variety’s bitter, grassy taste: all of the antioxidant power, none of the unpleasantness. Blended into sea salt, it turns an ordinary pinch an improbable, luminous blue.
