The potatoes are non-GMO starch potatoes, a crop grown for starch rather than for the table and far too starchy to be good eating, so nothing is diverted from the food supply. Potato starch runs higher in amylopectin than corn or wheat starch, and amylopectin is the part that gives a bag its backbone, which is why these hold together better than the corn-starch alternative.

Line the counter caddy with one, fill it through the week with peelings and coffee grounds and eggshells, and send the whole thing to the compost. Three gallons is the usual under-sink size.
