Mulling Syrup for Mulled Wine and Cider, 16 fl oz

Cinnamon, cloves, allspice, orange zest and Cape Cod cranberries, cooked down into a dark syrup that turns an ordinary bottle of red into the reason everyone stayed late. There is a specific kind of winter evening this was built for, though nobody will stop you from making it in July.

One bottle mulls two to three bottles of wine, or a gallon to a gallon and a half of apple cider — warm it gently on the stove and do not let it boil. It also does honest work stirred into baking or poured over roasted fruit.
