Unlike traditional blossom honeys, this is a honeydew honey, created from the natural resin secretions of the Abies cephalonica — the Greek fir. Deep mahogany-amber in color, with a complex savory-sweet profile, nutty undertones, and a refined herbal finish, it's prized for its dense, silky texture and naturally low sugar content. Because it's foraged from fir resin rather than floral nectar, it crystallizes far more slowly than blossom honey. Cold-extracted and unfiltered, each jar preserves the full aromatic depth shaped by the mountainous forests of Arcadia.
Every small-batch harvest is produced by Athanasios Manokas and his son Niko — fourth-generation Greek beekeepers. Drizzle it over sharp cheese, into black tea, or straight off the spoon.
