Resinous. Rare. Refined. Sourced from the high-altitude, untouched fir forests of the Peloponnese, our Raw Fir Honey is a refined expression of one of Greece’s most distinctive honeydew harvests. Unlike traditional blossom honeys, this is a honeydew honey created from the natural resin secretions of the Abies Cephalonica (Greek fir) tree. It is distinguished by its deep mahogany-amber color and a complex, savory-sweet profile with nutty undertones and a refined herbal finish. This Greek fir honey is prized for its dense, silky texture and naturally low sugar content. Because it is foraged from fir tree resin rather than floral nectar, it is naturally slower to crystallize than blossom honeys. Cold-extracted and unfiltered, each jar preserves the full aromatic depth and smooth character shaped by the mountainous forests of Arcadia. A Legacy of Artisanal Craftsmanship, every small-batch harvest is produced by Athanasios Manokas and his son Niko, fourth-generation Greek beekeepers.
