Before candles, before diffusers, there was a pot of water and whatever the kitchen had. Apple and orange, clove and cinnamon, rosemary and bay: dried whole, blended by hand, and meant to be simmered slowly until the whole house smells like a holiday nobody had to plan.

Tip a small handful into a saucepan with a few cups of water, bring it up and hold it at a bare simmer, topping up the water as it cooks down. One blend will carry an afternoon. Set it going twenty minutes before people arrive.
