These salts come from the centuries-old mines of Maras, high in the Sacred Valley of Peru, where mountain spring water is guided into terraced pools and left to the sun. They are harvested by hand using traditional methods by a woman-owned cooperative — ethical extraction, and the reason the salt still tastes like somewhere. Rich in minerals and trace elements, with a natural pink hue.

This is the spice blend: huacatay, panca pepper, yellow pepper, cumin, and garlic, ground fine. Mildly spicy, earthy, smoky. It goes on grilled meat, roasted vegetables, corn, eggs, anything that could use a little heat and a lot of character. Peruvian cooking in a jar, essentially, ready whenever you are.
